Try practicing without looking at the sheet music and letting the music in your mind come out through the instrument.
There are quite a few people who say, "I can’t play without sheet music."
However, when chatting with a friend, no one says, "I can’t speak without a script."
Playing the piano is like having a conversation using the piano, and that can eventually lead to improvisation.
